The Secret Story Behind Turkish Delight

Istanbul’s Haci Bekir sweet shop has been selling Turkish delight for two centuries, largely thanks to the business savvy of generations of women.

GruntVegan: Turkish Delight, also known as Lokum, is a sweet gel made of starch and sugar. Real lokum is vegan; it's made with cornflour (cornstarch for you non-European readers). There really is no need to add gelatine, as some less authentic versions do, especially as doing so would render it non-vegetarian, much less vegan.
